Ingredients
- 1 medium halved eggplant/ brinjal
- 1 tablespoon sesame paste
- 1 tablespoon finely chopped parsley
- 1 pinch salt
- 2 tablespoon lemon juice
- 1 clove minced garlic
- 2 tablespoon virgin olive oil
- 2 dashes powdered white peppercorns

Step 1
For making this simple recipe, first of all, heat little olive oil in a nonstick pan over low flame.

After 15 seconds, place the washed brinjal/eggplant on the pan, flesh side down, and cook for a minute or two.

Now, prick it with a fork a few times and char/roast over an open flame until uniformly charred.

Allow it cool. Then, scoop out the pulp and puree it in a blender.

Add the lemon juice, sesame paste, garlic and blend until smooth.

Pour it in a bowl. Sprinkle salt and pepper.

Drizzle some olive oil and garnish it with raw sesame seeds. Serve with toasted pita bread.
