Bacon-Pimiento Guacamole

Ingredients


  • 3 peeled and pitted ripe avocadoes
  • 2 1/2 tablespoons fresh lime juice
  • 3/4 teaspoon kosher salt
  • 1 4-oz. jar diced pimientos, drained
  • 1/4 cup finely chopped red onion
  • 6 cooked and crumbled bacon slices
  • 2 tablespoons chopped fresh cilantro
  • Blue corn tortilla chips

Description

Coarsely mash 3 peeled and pitted ripe avocados with 2 ½ Tbsp. fresh lime juice and ¾ tsp. kosher salt. Fold in 1 drained 4-oz. jar diced pimientos, ¼ cup finely chopped red onion, 6 cooked and crumbled bacon slices, and 2 Tbsp. chopped fresh cilantro. Serve with blue corn tortilla chips.
