Cheesy Potatoes and Ham

Ingredients


  • 1 pound potatoes
  • 4 ounces shredded cheddar cheese
  • 3/4 cup cream of chicken soup
  • 1/4 cup & 2 tablespoons ricotta cheese
  • 1 ounce diced onion
  • 2 tablespoons butter or margarine
  • 1/4 teaspoon pepper
  • 12 ounces ham slices
  • 4 side salads

Description

  1. Peel potatoes and cut into chunks. Place in a covered microwave baking dish.
  2. Mix together cheddar cheese, cream of chicken soup, ricotta cheese, onion, butter or margarine and pepper. Pour over potatoes.
  3. Microwave for three minutes. Stir.
  4. Microwave for five minutes and stir again.
  5. Return to microwave and continue cooking
    until potatoes are soft. (Times vary; approximately another five to ten minutes.)
  6. Prepare side salad.
  7. Brown ham slices lightly in a skillet over medium heat. Serve with cheesy potatoes
    and salad.
