Ingredients
- 1 pound potatoes
- 4 ounces shredded cheddar cheese
- 3/4 cup cream of chicken soup
- 1/4 cup & 2 tablespoons ricotta cheese
- 1 ounce diced onion
- 2 tablespoons butter or margarine
- 1/4 teaspoon pepper
- 12 ounces ham slices
- 4 side salads
Description
- Peel potatoes and cut into chunks. Place in a covered microwave baking dish.
- Mix together cheddar cheese, cream of chicken soup, ricotta cheese, onion, butter or margarine and pepper. Pour over potatoes.
- Microwave for three minutes. Stir.
- Microwave for five minutes and stir again.
- Return to microwave and continue cooking
until potatoes are soft. (Times vary; approximately another five to ten minutes.)
- Prepare side salad.
- Brown ham slices lightly in a skillet over medium heat. Serve with cheesy potatoes
and salad.
