Ingredients
- 12 ounces canned crab meat
- 2 eggs
- 2 slices bread
- 4 ounces onion
- 2 stalks celery
- 1 tablespoon & 1 teaspoon lemon juice
- 2 teaspoons milk
- 1 tablespoon & 1 teaspoon salsa
- 1 dash pepper
- 1/4 teaspoon dried parsley
- 1 tablespoon & 1 teaspoon olive oil
- 2 cups potato salad
- 2 cups sliced peaches
Description
- Drain crab meat and place in a mixing bowl. Beat egg into crab meat.
- Cut bread into very small cubes. Add to crab meat in mixing bowl.
- Mince onion and celery and add to mixing bowl. Sprinkle in lemon juice, milk, salsa, parsley and pepper. Mix well.
- Heat oil in a skillet over medium heat. Using an ice cream scoop, place crab meat in hot oil. Press with a spatula or pancake turner to flatten. Brown one side then flip and brown the second side (about 7 minutes per side).
- Serve Crab Cakes with deli potato salad and sliced peaches.
