Ingredients
- 1 cucumber
- 1/2 c. cup fresh mint, plus more for serving
- 1 c. gin
- 1/2 c. fresh lime juice (from about 5 limes), plus 2 limes, sliced
- 1/2 c. elderflower liqueur
- 1 750-ml bottle sparkling wine or 2 12-oz cans club soda
- Ice
Description
- Cut off one-third of the cucumber and set aside. Thinly slice the remaining cucumber and place half in a pitcher along with mint; gently muddle to release cucumber’s juices.
- Stir in the gin, lime juice and elderflower liqueur, then add the sparkling wine, remaining sliced cucumber and half of the sliced limes.
- Using a vegetable peeler, shave the reserved cucumber lengthwise into ribbons. Roll into spirals and secure with toothpicks.
- Serve spritz over ice with remaining lime slices and cucumber spirals.
