Elderflower Gin Cocktail


  • 1 cucumber
  • 1/2 c. cup fresh mint, plus more for serving
  • 1 c. gin
  • 1/2 c. fresh lime juice (from about 5 limes), plus 2 limes, sliced
  • 1/2 c. elderflower liqueur
  • 1 750-ml bottle sparkling wine or 2 12-oz cans club soda
  • Ice


  1. Cut off one-third of the cucumber and set aside. Thinly slice the remaining cucumber and place half in a pitcher along with mint; gently muddle to release cucumber’s juices.
  2. Stir in the gin, lime juice and elderflower liqueur, then add the sparkling wine, remaining sliced cucumber and half of the sliced limes.
  3. Using a vegetable peeler, shave the reserved cucumber lengthwise into ribbons. Roll into spirals and secure with toothpicks.
  4. Serve spritz over ice with remaining lime slices and cucumber spirals.
