Grilled Eggplant Recipe


  • 4 sliced eggplant/ brinjal
  • 2 teaspoon virgin olive oil
  • sea salt as required


  • Step 1

    To start with, wash the eggplants in running water and cut round slices in a large bowl. Next, put a grill pan on medium flame. and heat a teaspoon of oil in the pan and quickly spread the round eggplant slices on the grill pan.

  • Step 2

    Cook them from both the sides until golden brown in colour for about 10-15 minutes. Transfer the slices to a serving plate when done and drizzle olive oil on them along with sea salt evenly. (Optional: You can sprinkle Italian seasoning for enhancing the taste of this dish.)

  • Step 3

    Serve immediately or else the slices will turn soggy.
