Pear Gin Fizz


  • 2 pears
  • 1/2 c. honey
  • 8 sprigs fresh thyme, plus more for serving
  • 1 c. gin
  • 1 c. pear nectar or juice
  • 1/2 c. fresh lemon juice
  • 2 c. prosecco


  1. Coarsely grate 1 pear and add to small saucepan along with honey, thyme, and 1 cup water. Simmer until honey has dissolved and pear has broken down, 15 minutes. Remove from heat and let cool, then strain.
  2. In pitcher, combine gin, nectar, lemon juice and 1 cup pear syrup, then add prosecco. Thinly slice remaining pear. Serve gin fizz over ice with sliced pear and thyme sprigs if desired.
