Ingredients
- 2 pears
- 1/2 c. honey
- 8 sprigs fresh thyme, plus more for serving
- 1 c. gin
- 1 c. pear nectar or juice
- 1/2 c. fresh lemon juice
- 2 c. prosecco
Description
- Coarsely grate 1 pear and add to small saucepan along with honey, thyme, and 1 cup water. Simmer until honey has dissolved and pear has broken down, 15 minutes. Remove from heat and let cool, then strain.
- In pitcher, combine gin, nectar, lemon juice and 1 cup pear syrup, then add prosecco. Thinly slice remaining pear. Serve gin fizz over ice with sliced pear and thyme sprigs if desired.
