Ingredients


  • 2 packages scalloped potato mix (4.7 ounce)
  • 1 can diced tomatoes (14.5 ounce)
  • 2 cups water
  • 24 slices pepperoni
  • 8 ounces grated mozzarella cheese
  • 4 side salads
  • 1 spritz non-stick cooking spray

Description

  1. Preheat oven to 350 degrees.
  2. Spray an oven-proof baking dish with non-stick cooking spray.
  3. Empty dried potatoes into baking dish. Sprinkle contents of flavor package evenly over the potatoes.
  4. Drain tomatoes and spread over potatoes. Add water.
  5. Spread mozzarella cheese over the casserole and top with pepperoni slices.
  6. Bake in hot oven for 20 minutes or until cheese is brown and potatoes are tender.
  7. Serve with a side salad.
